Delicious Raw Apple Pies

This week we share another recipe from Rhonda's brand new
recipe book "Hallelujah Holiday Recipes." This particular
recipe is found in the "Holiday Delights" section of her
new book, and for my taste buds, is the most delicious
apple pie I have ever eaten - raw or baked.
HOLIDAY RAW APPLE PIE
CRUST (Page 225)
2 cups Almonds, soaked overnight and drained
1 cup Dates, or Organic Raisins, soaked for 2 hours and
drained
1 tablespoon Organic Apple Juice
1 teaspoon Pure Vanilla
Dash of Cinnamon
In a food processor using an "S" blade or grinder, grind
nuts until fine. In a food processor using an "S" blade,
process dates or raisins until they are finely ground. Add
apple juice, vanilla, and cinnamon through the chute while
the machine is running. The crust should appear damp and
hold together. Add more juice by the teaspoon full if
needed. Wet hands and press crust thinly into a pie plate
(from the center to the outside rim).
FILLING: (Page 205)
5 - 6 Gala or Golden Delicious Apples, peeled and cored
1 cup Organic Raisins, soaked one hour and drained (save
juice)
1 cup Soft Dates, pitted and soaked one hour and drained
1 tablespoon Flaxseeds, ground fine
Juice from one medium size Lemon
1/2 cup Organic Coconut, ground to a powder
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1/2 teaspoon Allspice
Put 1/2 of the apples and the water from soaked raisins into
a food processor with the "S" blade until a small
coarseness is achieved; pour into bowl and set aside.
Pulse the food processor off and on to process the other
half of the apples along with the remaining ingredients to
a slightly larger consistency. Add to the first batch of
apples and mix well. Put into crust and chill.
TOPPING: (Page 205)
Ground, roasted Coconut with chopped Walnuts or Pecans.
Place whole nuts around the edge if desired. ENJOY!

DELICIOUS RAW APPLE PIE
Almond pie crust:
2 cups almonds dry
1 teaspoon sea salt
2 cups pitted dates
Syrup:
1/2 cup pitted dates
1 orange, peeled and seeded
Splash of water
Filling:
5 cups apples, peeled,
1 cup raisins
2 tablespoons ground cinnamon
To make crust, pulse almonds and salt in a food processor until small pieces. You want your crust to have chunks of almonds in it, so don't over process. Use some of the finer powder to flour the bottom of a pie dish. Slowly add dates into processor in small batches to mix with almond bits. The dates will bind the almonds to form a dough. Press dough into the bottom of "floured" pie pan set aside.
To make syrup, place orange into your blender first then add dates and blend. If needed, add small amounts of water to help everything mix well. Set Aside!
To make filling, place sliced apples in a large bowl with raisins. Toss with cinnamon and syrup. Spoon filling into pie crust.
This will keep for two days... But it won't last with the hungry people:)
